Julie’s Treats – Blueberry Banana Muffins
Every month, our office comes together for a “birthday lunch” to celebrate the staff members who have birthdays that month. These lunches are highly anticipated days around the office, all because of Julie.
If you’ve come into the office after a birthday lunch, you’ve probably heard the staff raving about what they ate for lunch that day. Julie is a baker at heart, and always prepares a delicious meal and desserts to pair! We post pictures of all the wonderful desserts on Facebook, but Julie also shares her recipes in our quarterly newsletter!
For National Banana Bread Day, Julie shares her recipe that she evolved from a standard banana bread to these delicious banana blueberry muffins!
INGREDIENTS:
For The Muffins
- 1 cup sugar
- 1/3 cup softened butter
- 2 eggs
- 1 1/2 cups mashed bananas
- 1/3 cup orange juice
- 1 2/3 cups flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp baking powder
- 2 cups fresh blueberries
For The Toppings (as desired)
- Quick Oats
- Flour
- Cinnamon
- Brown Sugar
- Melted Butter
Instructions
Preheat the oven to 350 degrees.
In a large mixing bowl, combine sugar, softened butter, eggs, mashed banana, and orange juice. Mix until combined.
Once combined, add flour, baking soda, salt, baking powder, and fresh blueberries. Stir until combined.
Line a muffin tray and pour your mixture into the tray.
Next, in a small mixing bowl, mix quick oats, flour, cinnamon, brown sugar, and melted butter. Stir to combine.
Pour this topping on top of the muffins.
Once the oven is done preheating, cook muffins for approximately 30 minutes, or until a toothpick comes out clean. Let cool and enjoy!
